Briscione, the director of culinary research at the Institute of Culinary Education, wanted to focus on the science of flavor pairings only, so he limited his attention to the VCF dataset. Contrary to the cookbook Cognitive Cooking with Chef Watson where Briscione with IBM engineers used the VCF data along with cookbooks, history and other non-academic sources.
