Volatile Compounds in Food 16.10
Secondary alicyclic saturated and unsaturated alcohols/ketones/ketals/esters with ketals containing alicyclic alcohols or ketones and esters containing secondary alicyclic alcohols. Esters may contain aliphatic acyclic or alicyclic acid component.
European Parliament and Council Regulation (EC) N° 2232/96 sets out the basic rules for the use of flavouring substances in or on foodstuffs in the EU. It furthermore lays down a procedure for the establishment of a EU-wide positive list of flavouring substances. After its establishment only those flavouring substances listed may be added to foods.
The substances of the register are distributed in groups of structurally related compounds which are expected to show some metabolic and biological behaviour in common.
These chemical groups for flavouring substances are listed below.
